Description
CMC is a substitute for gum tragacanth powder. When added to sugarpaste, it strengthens the paste, making it suitable for modeling. It can also be added to royal icing to create a whiter modeling paste. This makes it a handy ingredient to keep in the cupboard for whenever you need to strengthen paste quickly.
