To create glass-like, bubble free clarity in your sugar/isomalt, pour against vinyl surface. Vinyl will not cause sugar to bubble, as many silicone surfaces will. The vinyl sheets can be used as a flat pouring surface, cut it into squares to line the inside of a wooden box, cut into long strips to create flexible retaining walls for containing hot sugar or for cutting out a custom stencil for shaping sugar. (Remember, the vinyl sheets can be cut and stacked to increase the depth.) Put a Silpat or parchment paper beneath the vinyl when casting hot sugar. The extreme heat from a large amount of hot sugar can make the vinyl stick to your countertop.
