Low Methoxyl (LM) Pectin is a natural, plant-based polysaccharide commonly extracted from citrus fruits and apples. It is widely used in bakery, confectionery, dairy, dessert, and fruit-based applications as a gelling, stabilising, and texturising agent. Unlike High Methoxyl Pectin, LM Pectin can form gels with low or zero sugar content, making it particularly suitable for reduced-sugar and sugar-free formulations.LM Pectin forms gels primarily through interaction with calcium ions rather than relying on high concentrations of sugar. Calcium ions act as bridges between pectin molecules, creating a stable three-dimensional gel structure. This allows LM Pectin to provide effective gel formation in products where sugar levels need to be reduced, such as low-sugar jams, jellies, fruit spreads, and other fruit preparations.LM Pectin performs across a relatively wide pH range of approximately 2.0�6.0 and is well suited to acidic food applications. It provides good texture, consistency, and structural stability while offering reliable performance during normal food-processing conditions. Its thermal stability makes it suitable for applications involving cooking or pasteurisation when appropriately formulated.
