It forms transparent thermo reversible gels with minimal syneresis, melts at high temperature and has the ability to gel at room temperature thus refrigeration is not required. Carrageenan is extracted from seaweeds. Seaweed undergoes alkali treatment, washing, chopping then extraction, filtered and precipitated with KCl, dried and powdered.
